This casserole has been a long-time family favorite.  It’s a great hearty, comfort dish the whole family loves.  You can also make two casseroles; one to enjoy immediately, and one to freeze up to three months.  When you’re ready to use the frozen casserole, refrigerate overnight, then bake as usual.  Trust me, the frozen one won’t last in the freezer very long because just knowing it’s there will make you hungry for it well before three months are up.

Ingredients:

2 lbs hamburger
½ cup chopped onion
½ cup chopped celery (optional)
½ cup chopped pepper
1 can tomato soup
½ cup of water
5 medium-sized potatoes (sliced)
1 can cream of mushroom soup
½ cup milk

Directions:

Brown hamburger, drain.  Put ¾ of the meat in the bottom of the baking dish.  Season with salt and pepper.     Place chopped vegetables over hamburger.  Pour tomato soup (combined with water) over vegetables.  Slice potatoes on this mixture.  Add the rest of the hamburger.  Pour the mushroom soup (combined with milk) over potatoes.  Bake 1 hour at 400 degrees.
